Valencian Paella

Authentic Valencian Paella is one of the most emblematic dishes of Spanish cuisine. This traditional recipe combines the succulence of chicken and rabbit with fresh vegetables and the unmistakable aroma of saffron, all slowly cooked in long-grain rice that absorbs every flavor.

Ingredients (serves 4)

  • 400 g chicken
  • 300 g rabbit
  • 240 g green beans
  • 160 g lima beans
  • 65 g finely chopped tomato
  • 100 ml oil
  • 350 ​​g rice
  • 800 ml water
  • 20 g
  • 2 g of salt
  • 2 g of ground paprika
  • 1.5 g of saffron

Preparation

Cut the meat into pieces (about the size of an egg). Heat the indicated amount of oil in the pan. When it is very hot, add the meat. Once browned, add the tomato and stir everything until well sautéed. Add the ground paprika and sauté. Then add the water, vegetables, saffron, and salt. Let it boil for 20 minutes over medium heat. Add the rice, spreading it evenly in the paella pan. Increase the heat to high for 10 minutes, then simmer for another 10 minutes over low heat. Once the rice is dry, let it rest for a few minutes before serving.
